I've gone for 6mm MDF but my boards aren't very big.
They're braced with 2 x 1 runners and drop straight onto the tops of the legs which are made of stud. I can lift them off when I need to start adding point motors, wiring it all up etc.
The whole shooting match is very rigid as there are stringers/side pieces with slats running along them to make shelves for books etc.
I don't currently have a workbench so needed a way of sizing and cutting the timbers I could do on a portable workmate thing with a basic hand saw.
Where the legs aren't quite the right height, I've just dropped a glazing shim in.
Ideal board?
